The secret? Butterfly pea flower. Its natural pigments are blue in neutral water and turn pink on contact with something acidic like lemon. Pure kitchen chemistry, zero additives.

Ingredients (2 glasses)
- 1 teaspoon of butterfly pea flower
- 250 ml hot water (not boiling, ~80°C)
- Juice of 1 lemon
- Ice
- Sweetener to taste (agave syrup, coconut sugar...)
- Cold water or soda to top up
Step by step
- Make the blue. Dissolve the teaspoon of butterfly pea in the hot water and whisk well with a chasen until you get an even, intense blue. Let it cool.
- Build the glass. Fill a tall glass with ice and, if you like, a little sweetener.
- Pour the blue. Add the blue infusion over the ice and top up with cold water or soda.
- The magic. Right before drinking, squeeze the lemon juice on top: watch the blue turn pink-violet instantly.
