Witch’s Blood: Green Matcha Blend with a dripping green rim

Witch green dripping down the rim of the glass, with a layer of cold foam on top. The “potion” is a syrup made from the same Green Matcha Blend, the one of ours that contains Japanese matcha, with chlorella and spinach.
Time: 10 min · Makes: 1 glass · Difficulty: easy
Ingredients
- 4 g (2 teaspoons) Green Matcha Blend: 2 g for the drink and 2 g for the syrup
- 50 ml hot water (80 °C)
- 150 ml cold milk or plant drink + 50 ml extra very cold milk for the foam
- Ice
- 2 tablespoons agave syrup or honey + 1 teaspoon hot water (for the rim)
Step by step
- Syrup: mix 2 g Green Matcha Blend with the agave and the teaspoon of hot water into a thick green syrup.
- Paint the rim of the glass inside and out and let a few drips run; 2 minutes in the freezer so they set.
- Sift the other 2 g into a bowl, add the 80 °C water (never boiling) and whisk with the chasen in a zigzag to a fine green foam.
- Fill the glass with ice without touching the rim and add the 150 ml of cold milk.
- Pour the green slowly over the back of a spoon so it floats: you’ll see two layers.
- Froth the 50 ml of very cold milk and crown the glass.

Tips
- No dry ice or tricks: the whole effect is just syrup and foam, and you drink all of it.
- If the green mixes into the milk, pour slower and closer to the surface.
