Pitaya Blood: Pink Matcha Blend with a dripping rim

Deep pink with a magenta dripping rim: Halloween without the gore. It all comes from one tin, Pink Matcha Blend (beetroot, pink pitaya and pu-erh red tea): some for the drink, some for the rim syrup.
Time: 10 min · Makes: 1 glass · Difficulty: easy
Ingredients
- 4 g (2 teaspoons) Pink Matcha Blend: 2 g for the drink and 2 g for the syrup
- 50 ml hot water (80 °C)
- 180 ml cold milk or plant drink
- Ice
- 2 tablespoons agave syrup or honey + 1 teaspoon hot water (for the rim)
Step by step
- Syrup: mix 2 g Pink Matcha Blend with the agave and the teaspoon of hot water into a thick, deep-pink syrup.
- Spoon it around the rim of the glass, inside and out, and let a few drips run down. Pop the glass in the freezer for 2 minutes so the drips set.
- Drink: sift the other 2 g into a bowl, add the 50 ml of 80 °C water and whisk until smooth.
- Fill the glass with ice without touching the rim and add the cold milk.
- Pour the pink over the top and watch it trickle down through the ice.

Tips
- The thicker the syrup, the slower and longer the drips. If it’s runny, add a little more agave.
- For a Halloween party, prep all the rims in advance and keep the glasses in the freezer until serving.
